Ayinger Celebrator – Bock – Doppelbock
6.7% ABV – Ayinger – Aying, Bayern
 

A beer that has a dominant malty taste. This beer’s origins in a monk’s recipe are reflected in its heartiness. The Pope of Beers, Conrad Seidl, describes it as: “Almost black with a very slight red tone, a sensational, festive foam and truly extraordinary fragrance that at first summons up visions of greaves lard. The first taste is of mild fullness with an accompanying coffee tone, which becomes more dominant with the aftertaste. There is very little of the sweetness that is frequently to be tasted with doppelbock beer.” The Ayinger Celebrator has been ranked among the best beers of the world by the Chicago Testing Institute several times and has won numerous medals.

Geuze Mariage Parfait – Lambic – Gueuze
8.0% ABV – Boon – Lembeek, Vlaanderen
 

Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime.

Stille Nacht – Belgian Strong Ale
12.0% ABV – De Dolle – Esen, Vlaanderen
 

Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging hasn’t decreased the quality of this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Duchesse de Bourgogne – Sour – Flanders Red Ale
6.2% ABV – – Vichte, Vlaanderen
 

Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months.

Saison Dupont – Saison
6.5% ABV – Dupont – Tourpes, Wallonie
 

Saison Dupont is a world classic beer and the yardstick for one of Belgium’s most important beer styles. It is the most admired AND imitated Saison in the world. A strong, vital yeast is key to full attenuation and thus to the style. Saison Dupont is straw colored with a dense creamy head. The nose is alive, like fresh raised bread, estery with citrus and spice notes. Full-bodied and malty, it sparkles on the palate and finishes with a zesty hop and citrus attack. Incredibly compatible with food!

Duvel – Belgian Strong Ale
8.5% ABV – Duvel Moortgat – Puurs, Vlaanderen
 

Duvel is a natural beer with a subtle bitterness, a refined flavour and a distinctive hop character. The unique brewing process, which takes about 90 days, guarantees a pure character, delicate effervescence and a pleasant sweet taste of alcohol.

Apart from pure spring water, which is the main ingredient of beer, barley is the most important raw material. Barley must germinate for five days in the malt house, after which malt remains. The colour of the malt and as a consequence also of the beer is determined by the temperature. Duvel obtains its typical bitterness by adding various varieties of aromatic Slovenian and Czech hops. We use only exclusive hops that are renowned for their constant, outstanding quality.

Duvel ferments for the first time in tanks at 20 to 26°C. The brewer uses his own culture for this. The original yeast strain, which Victor Moortgat himself selected in the 1920’s, originates from Scotland. After maturing in storage tanks in which the beer is cooled down to -2°C, the drink is ready for bottling. Thanks to the addition of extra sugars and yeast, the beer ferments again in the bottle. This occurs in warm cellars (24°C) and takes two weeks. Then the beer is moved to cold cellars, where it continues to mature and stabilise for a further six weeks. This extra long maturation period is unique and contributes to the refined flavour and pure taste of Duvel.

Oude Gueuze Cuvée René – Lambic – Gueuze
5.5% ABV – Lindemans – Vlezenbeek, Vlaanderen
 

Gueuze Cuvée René is one of the jewels of our brewery. With its golden colour, its sparkle and its beautiful sherry aromas, this is the queen of gueuzes.

This old gueuze is a blend of old and young lambic matured in large oak barrels called foudres. It is then bottled in a beautiful champagne bottle where a second fermentation takes place. After 6 months, the gueuze obtains a golden colour and is slightly carbonated and tart. But kept in a cellar for a few years, it becomes truly exceptional!

The use of a champagne bottle dates back to an uncertain time period when lambic brewers specialised in recovering empty bottles from great restaurants and other establishments where a lot of champagne was consumed. That is why we chose the most noble of bottles to hold our noblest beer.


Aged Pale – Sour – Wood Aged
7.3% ABV – Petrus – Bavikhove, Vlaanderen
 

Petrus Aged Pale is a 100% uncut (not blended) beer from our oak foeders and aged for 24 months. Michael Jackson, the beer hunter, chose the name in the late 1990’s and he was the first to sell it in his beer clubs. Today, it is still a leading reference for SOUR beers worldwide. Petrus Aged Pale has won multiple gold medals in international beer competitions. Moreover, ever since the start of the brewery, Petrus Aged Pale is used as a blending beer to give other beers fresh and slightly sour flavours and aromas. Cheers!

Oatmeal Stout – Stout – Oatmeal
5.0% ABV – Samuel Smith – Tadcaster, North Yorkshire
 

Brewed with well water (the original well at the Old Brewery, sunk in 1758, is still in use, with the hard well water being drawn from 85 feet underground); fermented in ‘stone Yorkshire squares’ to create an almost opaque, wonderfully silky and smooth textured ale with a complex medium dry palate and bittersweet finish.

Aventinus (TAP6) – Bock – Weizendoppelbock

For golden moments by the fireplace: “Mein Aventinus” – the wholehearted, dark ruby coloured wheat beer, intensive and fiery, warming, well-balanced and tender. Bavaria’s oldest wheat “Doppelbock” – brewed since 1907! Its sturdy body in combination with its sweet malty aroma is an invitation to profound indulgence – an ingenious blend with a strong body. Perfectly matches rustic dishes, dark roasts and sweet desserts.

Maudite – Belgian Amber

Maudite has a deep amber-red color with a rocky foam head and an appealing aroma of wild spices and floral hop notes. It is spicy, vinous, and deliciously complex with a crisp hop finish.

Tremens – Belgian Strong Golden Ale

NB: Depending on the location and batch, this beer can be either 8.5% or 8.7%. Please do not post an edit request asking to change it from one to the other.

The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste of results from the use of three different kinds of yeast. The result is a finish of peppery bitterness without aggression. The gray bottle hides a mystery awaiting discovery by the none faint of heart.

This brown ale was brewed to commemorate the Lungevity Everest Expedition. Brian Oestrike the brother of Jackie O’s owner Art, summited the unforgiving mountain on May 22nd, 2007. St.Bernardus Tokyo Sounds familiar? You are quite right, because in 2012 we launched a one-off brew on the occasion of the opening of the first St.Bernardus-themed café in the Japanese capital. Eight years later, you can sample our St.Bernardus Tokyo again, albeit with a new recipe!

The young Belgian illustrator Jonas Devacht created the artwork for the can, which consists of an impression of Japanese nightlife in the iconic streets of Kanda district, where you can find ‘Brasserie St.Bernardus’.

St.Bernardus Tokyo is an unfiltered ale, which has been brewed with a large amount of wheat, holding the middle between a white beer and a saison.

St.Bernardus Tokyo is an unfiltered, golden ale, topped off with an impressive white collar.

Character, taste, aromas

St.Bernardus Tokyo is famed for its hints of citrus, combined with likeable florals of chamomile and fruity yeast aromas of banana and red apple. Attentive beer fans may also detect a hint of clove and vanilla, as well as the typical esters of our unique St.Bernardus yeast. A refreshing beer with a spicy aroma and a slight hint of bitterness and sourness on the back of the palate! A real treat for the more adventurous beer fan.

Mead with Banana and Spices
2017 Silver Medal Winner at the Mazer Cup International Mead Competition.
Tasting Notes: Rich banana, vanilla and honey sweetness with caramelized sugar flambe’. Coffee aroma on the nose but not present on the palette provides depth and balance.

It is said that once, long before the birds and the bees, there was the Banana and the Bee. The rowdy Banana came from the wrong side of the tracks, so it was instantly a scandalous relationship. Things were hot for a while, practically a flambé. Their love didn’t last long, though, as it was steeped in good times and a heavy dose of a certain Caribbean libation. After the flames settled settled they decided it would be best to stay BFF’s.

A medium dry cider with brilliant straw colour, light body, clean apple flavour and a gentle apple blossom finish. Best served at about 44°F (7°C).

Samuel Smith’s makes this cider at a small, independent British brewery, the oldest brewery in Yorkshire.

Dry, sparkling pear cider with glowing pale straw colour,smooth body, crisp but rich flavor and the gentle aroma of a summer pear orchard.
