This particular Cuvée Armand & Gaston has been blended with lambics from 8 different barrels and originating from 9 brews. This blend contains 47% matured and old lambics from 6 different brews.
3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. This cuvée, like all of our lambic, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. For this specific Oude Geuze Golden Blend, we blended lambikken from three different barrels and five different brews. The brew consists of more than one third of 50-month old lambik.
We also added one sherry barrel of 34-month old lambik. This way, the weighted average age of the blend upon bottling is 28 months. About one third of the 3 Fonteinen lambik was brewed with Pajot grown cereals. This is the same blend as the 31st, but with a different sherry barrel.

Framboos Oogst 2019 (season 19|20) Blend No. 14 – Lambic – Framboise

This Framboos was created with raspberries from Ferme Framboos from beautiful Huldenberg. We macerated these for three months on jonge lambik from three different barrels and three different brews. We blended with another two jonge lambikken from two different barrels. The final fruit intensity is 284 grams of raspberries per litre of Framboos. 100% 3 Fonteinen brewed lambik.

Nocturne is a spontaneously fermented full malt beer. Not your typical lambik beer, but our take on a Vlaams Oud Bruin. The beer was brewed with five different barley malts, from pilsner malt to dark roasted malts, and no wheat whatsoever.
This batch was brewed in March 2018 with more dark chocolate malt, and put on barrels for four years before we blended it with a small portion of freshly brewed Nocturne. The weighted average age of this beer upon bottling is 45 months.

This particular Oude Geuze has been blended with lambics from 6 different barrels and originating from 6 different brews.
3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. Lambic and Geuze are living, cultural heritage rooted in the Zenne valley! Ayinger Celebrator – Bock – Doppelbock

A beer that has a dominant malty taste. This beer’s origins in a monk’s recipe are reflected in its heartiness. The Pope of Beers, Conrad Seidl, describes it as: “Almost black with a very slight red tone, a sensational, festive foam and truly extraordinary fragrance that at first summons up visions of greaves lard. The first taste is of mild fullness with an accompanying coffee tone, which becomes more dominant with the aftertaste. There is very little of the sweetness that is frequently to be tasted with doppelbock beer.” The Ayinger Celebrator has been ranked among the best beers of the world by the Chicago Testing Institute several times and has won numerous medals.
Oerbier – Belgian Strong Dark Ale

Oerbier means original, from the source. This beer has been brewed in small scale (5 gallons) at home in a copper wash kettle, by two brothers who were students at the time. They took over an old brewery which was out of business and said: “If we don’t bring the brewery back to life, nobody will!”. It was also a unique opportunity to create some interesting brews, so why not try it? Therefore we went ahead. We did the main work ourselves and kept the scale of the brewery as it was. Since then, the brewery and its beers have been an inspiration for a lot of brewers. Oerbier is brewed from all different malts, Poperinge Golding hops in flowers and a special yeast which makes it a little tart, especially with aging. At the brewery we have excellent cellars which have a constant temperature of 8°C allowING Oerbier to age at its best.
After a couple of years Oerbier tastes like it has been blended with wine… Oerbier has been refermented in the bottle and contains a layer of yeast, having vitamins B. NAT en STRAF on the glasses means WET and STRONG, a warning for the 9 vol. alcohol content. The little person on the glasses is the Oerbier man, a simple creature who holds a brewers fork in his right hand, symbolizing the work and science, but looking to the other side, the result of all this, the glass of (Oer)beer. The artwork on the poster is a wallpainting found in Spain (Altamira) and is considered by art lovers as being the best prehistoric art work (30.000 years BC).
Nocturnum – Belgian Strong Dark Ale

Color and Sight:
Dark Chocolate Brown with a compact foam, white-yellow, stable and creamy. Odor Touches of caramel, mocca and chocolate. Spices such as licorice and coriander are also present.
Taste:
Initially a very pleasant sensation in the mouth of alcohol and softness. It is followed by a growing bitterness, which comes partly from hops, but also from roasted malt and chocolate malt.
Towards the end, pleasant balance between bitter, sour and sweet notes.
Tremens – Belgian Strong Golden Ale

The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste of results from the use of three different kinds of yeast. The result is a finish of peppery bitterness without aggression. The gray bottle hides a mystery awaiting discovery by the none faint of heart.
Utopias Barrel-Aged 120 Minute IPA – IPA – Imperial / Double

Duchesse de Bourgogne – Sour – Flanders Red Ale

Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months.
Saison Dupont – Saison

Saison Dupont is a world classic beer and the yardstick for one of Belgium’s most important beer styles. It is the most admired AND imitated Saison in the world. A strong, vital yeast is key to full attenuation and thus to the style. Saison Dupont is straw colored with a dense creamy head. The nose is alive, like fresh raised bread, estery with citrus and spice notes. Full-bodied and malty, it sparkles on the palate and finishes with a zesty hop and citrus attack. Incredibly compatible with food!
Gulden Draak – Belgian Strong Dark Ale

Such an impressive symbol that has been around for more than 6 centuries requires an equally impressive beer. Like the dragon at the top of the city, Gulden Draak has been one of the world’s best beers for years. It is a dark tripel, which in itself makes it an exceptional beer, but the complex taste with notes of caramel, roasted malt and coffee makes it unique.
For the secondary fermentation use is made of a wine yeast that determines the unparalleled taste and that ensures the long-term taste evolution (= living beer). The older the beer gets, the more aroma it gets and the fuller the taste and color become.

The appearance of this exceptional beer is matched only by its taste! To make our Framboise, we add raspberry juice to our lambic. That gives it a delicate fruity aroma and a beautiful dark pink colour, just like the dress I wore to our cousin Willy’s wedding. (But that’s of no interest to you since you undoubtedly don’t know Willy). Framboise is served as an aperitif, but I also use it in cooking. And when I don’t finish the bottle in my preparations, I finish it in my glass.
Oude Geuze (Vieille) – Lambic – Gueuze

Oud Beersel Oude Geuze is one of nature’s miracles. Oude Geuze is a blend of lambic from different years. One year old lambic is still readily fermentable. Two year old and three year old lambic main contribution is to the taste. Blending the lambic produces a sparkling beer that is made in accordance with time-honoured traditions. Oud Beersel Oude Geuze notable hop and fruit character is much appreciated by beer fans.
Aged Pale – Sour – Wood Aged

Petrus Aged Pale is a 100% uncut (not blended) sour beer from our oak foeders and aged for 24 months. Michael Jackson, the beer hunter, chose the name in the late 1990’s and he was the first to sell it in his beer clubs. Today, it is still a leading reference for SOUR beers worldwide. Petrus Aged Pale has won multiple gold medals in international beer competitions. Moreover, ever since the start of the brewery, Petrus Aged Pale is used as a blending beer to give other beers fresh and slightly sour flavours and aromas. Cheers!

Brewed with well water (the original well at the Old Brewery, sunk in 1758, is still in use, with the hard well water being drawn from 85 feet underground); fermented in ‘stone Yorkshire squares’ to create an almost opaque, wonderfully silky and smooth textured ale with a complex medium dry palate and bittersweet finish.

Madeline – Mead – Boysenberry

Schramm’s Madeline is our boysenberry mead, made with whole boysenberries and Michigan honey. A cross between European raspberry, common blackberry and American dewberry, the boysenberry has a unique tannic flavor which combines wonderfully with carefully selected premium honey. The resulting mead is thick, jammy and extremely flavorful and pours dark purple with a very smooth, lightly tart finish. This mead is a tribute to our favorite, tiny release to date, Madeline June Schramm Naeger. Ten percent of sales of this mead are donated to the Royal Oak Beaumont NICU, where Madeline spent nearly the first three months of her life. She was beautiful when she was born, but we know she will continue to mature beautifully with age.

Schramm’s – Ferndale, MI
Schramm’s Red Agnes is more finely balanced and perceivably less sweet than her Scottish cousin, Black Agnes. Red currants provide deep floral aromatics, a fruitier initial impression, more focused acidity, and a stunning cardinal hue. Lighter and more quaffable than Black Agnes, this mead is dangerously drinkable with a delicately balanced acidity which allows the honey and fruit to sing in harmony together.
